The mature fruits obtained from pistachio tree from variety of (Pistacia vera), the fruits are naturally or mechanically dried. Should be oval – shaped kernels with a thin, wrinkled skin, encased in an oval, opened shell, dry and clean, free from rancidity, mould and infestation.
